Chicken Cutlets | Quick Crispy Chicken Cutlets Recipe | Chicken Patties
Mixture prep 15-20 minutes
Ready in 10 minutes
Serves 4-6 people
Pre-Preparation:
- Boil potatoes for approx. 15-20 mins.
- Pound Ginger & Garlic.
- Chop Onion, Coriander.
Ingredients:
- 2 - Eggs
- 2 medium size Potatoes
- 1 medium size Onion
- 1 cup - minced/shredded chicken
- 1 tbsp - Garlic (Pounded)
- ½ tbsp - Ginger (Pounded)
- ½ cup - Homemade Ghee/clarified butter (or Oil)
- ½ cup - Fresh Coriander
- ½ cup - Bread crumbs/Sooji/Semolina
- ½ tsp - Salt (As per taste)
- ½ tsp - Turmeric
- ½ tsp - Garam masala
- ½ tsp - Hing/Asafoetida (Optional)
- 1 tsp - Mutton masala/Paprika (Optional)
*All ingredients used are organic & local.*
Mixture preparation:
- Add Ghee to a heated pan and then add Hing.
- Add chopped Onions and saute them.
- Cover the mixture for around 5 mins or until the onions are translucent.
- Now, add Ginger & Garlic to it and saute for few more mins or until Ginger & Garlic is well cooked.
- Add minced chicken and mix it well.
- Add chilies and saute them.
- Add turmeric, garam masala, and mutton masala. - mix the mixture well.
- Mash the boiled potatoes & add them to the mixture OR grate the potato & mix it.
- Add chopped coriander and mix well.
- Off goes the flame. Stir and make sure the mixture doesn't get burnt.
Egg wash & breadcrumbs:
- Break one egg into a bowl & beat it well.
- Spread breadcrumbs on a plate. I have used ready made breadcrumbs but to make breadcrumbs at home put preferred bread into a baking sheet and to a preheated oven at 250F (120C) for around 15-20 mins. Check if your bread slices are hardened, remove them and let them cool down(Do not burn them). Once cool down, put them into a bag and beat that with rolling pin and you have breadcrumbs ready or put it in a mixer.
Shaping the mixture:
1. Take a small amount of mixture on your palm and shape them as desired (round, oval) and you can also, make them thick or thin based on your preference.
2. If the mixture sticks to your palm then add a drop of an oil or water to your palms and then start shaping it.
3. Then give each cutlet an egg wash by dipping them into a beaten egg.
4. Finally, add cutlet to the breadcrumbs and make them sit for 5 mins. You can also, refrigerate for approx. 10 mins but it's optional.
Shallow frying cutlets:
- Add Ghee to a heated pan and now add cutlets.
- Fry them on one side for 5 mins or until golden-brown and then flip them to another.
- Remember, our mixture is pre-cooked so don’t overcook the cutlets.
- Once the cutlets are fried, remove them on a nice clean plate.
- You can enjoy these hot & delicious cutlets with mint/coconut chutney, pickle, dahi/yogurt or enjoy them as is).
Tips:
2. You can also, add coriander powder, ½ tbsp of lemon juice but this is completely optional.
3. Do not add water else your mixture will be soggy.
Quick health gyaan:
- Minced meat has higher calories than lean meat. For this recipe, you can replace minced chicken to boiled chicken breast and then shred it.
- Vegans feel free to replace chicken to soya.
- Avoid using breadcrumbs or semolina as it soaks a lot of oil. Cutlets that are only egg washed also taste as delicious as the one with breadcrumbs/semolina.
- Eat reasonably, there is nothing wrong in eating fried food if it’s eaten in the right amount.
