Preparation (Preheat the oven at 350℉):

Mixture 1: In a large bowl, sieve Cake flour and Baking soda together to remove lumps and then add salt and loosely fold it the dry ingredients.
Mixture 2:
1. In a medium bowl, add butter & whisk it on low.
2. Then gradually add Sugar and whisk it on low.
3. Add Eggs (one at a time) and whisk on low.
4. Finally, add mashed bananas and whisk everything well.
5. Now, add Mixture 2 to Mixture 1 and fold everything very well.
6. Add rum/vanilla extract followed by blueberries to the batter.
7. Now pour the batter into a 9x5 inch loaf pan (or any desired pan) and let it rest for around hour. By the way, to make the batter rest is totally optional.
8. Now put the pan into a pre-heated oven at 350℉ for exact 60 minutes

Tips:

  • For best results make sure your rest your batter at least for an hour. In fact, I rested my batter for around 3 hours.
  • Please try not to use butter at room temperature. This is an excellent secret tip I would like to give, in-order to keep the bread moist and soft from inside make sure your butter is semi-thawed. So remove the refrigerated butter for approx. 20-30 mins before you begin.
  • Adding Blueberries gives your bread an amazing sweet & sour taste. You can substitute Blueberries to Cranberries (dry or fresh), Raspberries, Strawberries, Cherries, dry fruits, etc. Be creative.
  • The butter, eggs, extract that I used were not at room temperature, I thawed them for around 20 mins before starting my process.
  • Oh yeah, btw I used small or baby bananas for my recipe as they are sweeter compared to regular ones. In fact, I use 1 & ½ dozen of those, freeze them and then thawed them and they tasted absolutely amazing.
