Schezwan Sauce Recipe | Szechuan | Chinese Schezwan Sauce
Ready in 20 minutes
Serves 5-6 people
Ingredients
- 1 cup - Garlic (finely chopped)
- ½ cup - Ginger (finely chopped)
- ½ cup - Celery (finely chopped)
- ¾ cup - Red chili paste
- ¾ cup - Oil
- ½ cup - Water
- 1 tbsp - Apple cider/cooking vinegar
- 1 tbsp - Light soy sauce
- 1-2 tbsp - Sugar (Optional)
Preparation:
- Chili paste - Soak around 10-12 Shimla Mirch (chili) for about 30 mins in hot water. After 30 mins, remove seeds and chili head and keep the skin. Now put it in a grinder and add 1-2 tbsp water if required and grind it to a fine paste.
- Heat a pan, add oil followed by Garlic and saute it well on medium-high flame cook it for around 3-4 minutes. Make sure you continuously stir the mixture else it will start burning.
- Add Ginger and saute for another 3-4 minutes.
- Add celery and cook everything for 3-4 mins while stirring it.
- Add Salt, light soy sauce, Apple cider/cooking vinegar and mix everything well.
- Add red chili paste and give it a good stir.
- Add Sugar followed by ½ cup of Water. Add another tablespoon of Sugar and mix everything well.
- Now cover the mixture and reduce the flame to low-medium and cook for around 12-15 minutes. I cooked for 15 minutes without stirring BUT if your mixture is burning then you can stir it in between.
- After 12- 15 minutes, remove the lid and turn OFF the flame and stir everything well.
- Our delicious sauce is ready, let it cool down a bit if you are going to place it into a glass container else due to extreme heat the glass container might crack.

Tips:
- Due to excess oil, the shelf life of sauce is about one month. If you want to increase the shelf life then follow the rule of storing pickle i.e. submerge everything in an oil and the oil should be around half an inch above the mixture. Also, if you do this then do not forget to mix everything once or twice a week. Yeah if this is a work for you then imagine store bought sauce with all the harmful preservatives.
- There are many different uses for this sauce like for making schezwan noodles, schezwan rice, chicken lollipops, veg/vegan lollipops, schezwan salad, as a chutney to your Indo-Chinese appetizers or have it as it with chapati/roti or as a pickle for your Dal (yum!), etc.
- You can totally avoid Sugar but I’m not a big fan of Spicy food so I have added Sugar.
- Don’t worry about using excess oil. You are not going to eat all of this schezwan sauce in one sitting and by yourself. Of Course, it’s going to be used in different cuisines and probably gonna get shared among your housemates so you are not consuming all of that oil. Also, there is nothing wrong in oil and no oil doesn’t make you gain weight but you eating habits i.e. eating wrong food at wrong time makes you gain weight. So as I say, consuming anything in moderation is a key to life and healthy well-being. Now I can write a whole book on how eating right at right time is important and key to healthy weight and managing those sexy curves but let's keep at eating right at right time for now. :P
